Hello February!

It is officially tax season! With that said, I like to use some of our tax return to restock the fridge and pantry. This meal plan I am focusing on freezer Filler dinners!

For breakfast and lunch, I kept things simple. For breakfast it’s just a favorite cereal or oatmeal with favorite fruit, which right now is apples for my boys. Lunch is just going to be leftovers from the night before. This way most of my attention can be focused on the dinners and making freezer meals that later can be used as backup dinners as known as plan B meals.

Below is a Walmart list of ingredients for this weeks meal plan. It is set up to double meals if you want to make freezer filler dinners. If not simple get what you need for the week. I did not include seasoning as most people have what they use on hand. This is NOT an affiliate link. I’m just providing a little simplicity!

Walmart List

This is the list of ingredients I will use but feel free to make them the way you and your family likes. Also I’m sure some people will not like the cilantro dinner and that’s ok, make chicken enchiladas instead as they can also be put in the freezer! Don’t forget to have freezer bags and aluminum pans for making freezer meals!

Southwest Casserole Ingredients
• 2 cups uncooked elbow macaroni
• 1 pound ground beef/turkey
• 1 large onion, chopped
• 2 garlic cloves, minced
• 1 can diced tomatoes with green chilies, undrained
• 1 can kidney beans, rinsed and drained
• ½ can (6oz) tomato paste
• 1-1/2 teaspoons salt
• 1 teaspoon chili powder
• 1/2 teaspoon ground cumin
• 1/2 teaspoon pepper
• 1 cup shredded Monterey Jack cheese
• 1 jalapeno peppers, seeded and chopped

Garlic Parmesan Chicken Ingredients
• 1 pound boneless chicken breasts
• 1 (12-ounce) jar Buffalo Wild Wings Garlic Parmesan Sauce
• 1 cup heavy cream or milk
• 1/2 cup fresh grated parmesan cheese
• 16 oz rotini or penne pasta

Lasagna Ingredients
• 1 lb ground beef/turkey
• 1 onion (chopped)
• 3 cloves minced garlic
• salt, garlic powder, onion powder, Italian seasoning, pepper etc to taste
• 24 oz spaghetti sauce
• 12 oz feta cheese
• 2 cups Italian blend cheese
• 10 oz lasagna noodles

Cilantro Lime Chicken Ingredients
• 1 lb boneless skinless chicken breast
• 1 cup orange juice
• 1 cup chicken broth
• 4 TBSP lime juice
• 2 tsp minced garlic
• 1/2 cup chopped cilantro leaves
• 1 can black beans, drained and rinsed
• 12oz package frozen corn
• 1 tbsp ground cumin
• Cooked rice

Sloppy Joe Ingredients  
• 1 lb browned ground beef/ turkey
• 1½ cup Ketchup
• 1 can (15oz) tomato sauce
• 2 tsp Worcestershire sauce
• 2 tsp brown sugar
• 2 tsp Mustard
• 1 tsp minced garlic
• Diced onion, bell pepper, and celery(about 2 stalks)

Red Beans and Rice Ingredients
• 2 cans Red beans, drained and rinsed
• 4 cups of beef broth
• 2 cups water
• 1 bell pepper chopped
• 1 onion chopped (medium)
• 3 celery stalks, chopped
• 3 garlic cloves, chopped
• 1 package (12-13oz) andouille sausage (or smoked sausage or kielbasa)
• 3T. Creole seasoning
• Cooked Rice 

Cheddar Broccoli Pasta Salad Ingredients
• 16oz tri-colored rotini
• 1 head of broccoli, chopped
• 1 medium red onion, finely diced
• 2 cups of cheddar cheese
• 2 cups mayonnaise
• ½ cup sugar
• 2 tablespoon apple cider vinegar
