Happy Valentine’s Weekend!

I hope you all had a great Valentine’s Day weekend.  The dinner I had planned fell through. Shrimp was nearly impossible to find and then when we did get some it was rotten. Ugh, terrible! Thankfully my husband surprised us with steaks for him to cook! I love it when that man cooks! Do you have a special meal or plans you like to do for Valentine’s?

As I’m typing this, my house is filling with the smell of fresh baked bread. It is kind of gloriously distracting. I had decided about a week and a half ago to restart my sourdough journey. I had attempted several years ago but it failed. I don’t know what I did wrong, but it’s gaining popularity again so I’m giving it a go. Today, since it’s refresh the fridge day, rather than making meals, I’m making bread! I’m excited! 

Anyway, back to the menu. We still had orange juice from last week, so I’m planning to make orange chicken to get that used up. Also, with the price of eggs getting high, I limited my use of them. The baked oatmeal was a recipe I found a few years ago. I don’t remember where I found it, but it is not my recipe, and honestly, I have not ever made it before. It looks like it would be good though. I like that it incorporates protein and fruit in the one. I do have two breakfast items with peanut butter, and if you have a peanut allergy, if there is something you use similar to peanut butter, it might work. I do know that finding overnight oat recipes is very easy to look up. Saturday, I am having a girl’s night with some friends, so the boys are going to pick one of the freezer meals we made a few weeks ago to have that night. If you prepped with me and have some of those meals, awesome, if not, grab some frozen pizzas or other freezer meal from the store. Do you have a favorite dish you might make that night instead?

This time, I got my plans done a bit better, and I have the list of ingredients available. I also made a walmart list to make shopping easier. Again, it’s not an affiliate link, I’m just providing a little ease. This is just based on what my family likes and eats. You are always welcome to do something your family prefers. I’m just providing a guide line.
